Made from 100% Chardonnay, bottle conditioned for complexity and texture. Made the same way (and from the same batch of fruit) as our Pet Nat Chardonnay, but with one extra step, where we remove the yeast cells and replace it with a Dosage. Dosage = the standard practice of adding a small amount of sugar to sparkling wines after disgorgement.⠀ .⠀ With the NR Sparkling the objective isn't to create any perceptible sweetness, but rather to create the perfect balance with the naturally high acidity of the wine and allow the fruit flavours to come through. We settled on 3g of sugar per litre (for you trainspotters), which (by means of comparison) is the equivalent of an Extra-Brut.
