Hand sorted and stomped before undergoing wild fermentation in open fermenters, where it is hand plunged daily. Hand pressed then matured in French oak barrels (15% new). Full wild malolactic fermentation.

Rich aromas of plum, earth and chocolate with a mouth-filling richness and soft tannin structure.
